How to Make Liver Sexy and Edible

SexyLemonLiverAs athletes and parents we all find ourselves preoccupied with nutrition. But when did nutrition become pills and powders? If you want to fill in the missing gaps in your nutrition then liver is a great alternative. But liver is gross, you say? My kids will never eat it, you say?

I have tried every recipe: fried, sautéed with onions, oven baked with bacon, blended into pate (with a healthy helping of cognac), and more. Sometimes the recipes were pretty good but often they were just gross. I never found one that made me excited to eat liver (or made my son not gag at the table)

After quite a bit of experimenting, I finally created a simple one that everyone could agree on for dinner.

Sexy Lemon Liver

Serves four

UncookedLiverFour pieces of Liver

Fresh or bottled lemon juice

Coconut Flour

Salt & Pepper

Sautéed Onions or Fried Crispy Onions

Cooked Bacon

Step 1 – Preheat oven to 350 degrees F

Step 2 – Marinate your liver for at least two hours (six to eight will give it better flavor) in enough lemon juice to thoroughly coat it.

Step 3 – Fill a dinner plate with coconut flour, mix in salt and pepper to taste. (you would think garlic or onion would make it better but it doesn’t)

Step 4 – Do not rinse the lemon juice off the liver. Just take them right out of the marinating dish or bag and dip them into the coconut flour so they are thinly coated (If you put too much on the texture will be chalky).

Step 5 – Put the liver on a cookie sheet lined with parchment paper and Bake for 20 minutes

Step 6 – When it comes out of the oven, cover it with onions and crispy bacon. Feed your whole family (even my kids, who are seven and one, eat it up)  Enjoy!!
